When Andrea Aftab Pauro launched Andrea’s in 2016, it wasn’t simply a restaurant opening. For him, it was the realisation of a lifelong journey shaped by travel, family, and a deep love for food. The idea had been simmering for years, inspired by childhood travels that took him through markets, homes, and kitchens around the world. “Food is a window into culture and a way to connect people,” he says. Andrea’s was designed to capture exactly that warmth, generosity, and the joy of shared discovery.

Raised by parents who believed in seeing the world the real way, through people and flavours, Pauro’s early adventures across Asia, Europe, and Africa laid the foundation. “Italy taught me simplicity, Thailand taught me vibrancy, and the Middle East taught me generosity,” he recalls. Those lessons now echo in every dish on his menu, from comforting Italian classics to playful Asian plates and soulful Middle Eastern grills.

Among his most-loved creations is the restaurant’s iconic Tiramisu, inspired by an Italian Cremino recipe passed down from his father. “It’s rich yet light, creamy but never heavy,” Pauro says. “The secret is in respecting the recipe — no shortcuts, no improvisations when it comes to the classics.” It’s a dessert that has become a symbol of nostalgia for him and an essential part of Andrea’s experience for diners.

Beyond the famous Tiramisu, the newly opened Gurugram outlet, Andrea's Eatery introduces new favourites like Gambas al Ajillo, Pollo Pizzaiolo, Kafta Lamb Burger, and Chilli Cheese Wontons, each dish carrying a story from Andrea’s travels. “They’re all different in style, but the thread that ties them together is authenticity, balance, and joy,” he explains. The menus at Andrea’s strike a careful balance between staying true to global authenticity and catering to Indian palates. “I design menus based on memory and experience, not trends. Indian diners today are incredibly aware — they appreciate honesty in food.”

Over the years, India’s F&B landscape has evolved rapidly, and Andrea has had a front-row seat to that transformation. “What excites me is how fearless people have become with food,” he says. “The future of dining is about honesty and experience — ingredient-driven menus, authentic storytelling, and spaces that make people feel something.”

Every Andrea’s outlet carries its own rhythm, shaped by its city. “Gurugram is a little more laid-back — people love to share, so our menu encourages that,” he notes. Yet, the signature warmth remains constant across locations. “Whether you walk into Andrea’s in Delhi, Mumbai, or Gurugram, it should always feel like a familiar space.”

Pauro’s approach to growth is measured, thoughtful, and deeply personal. “Expansion only makes sense if we can maintain the same soul,” he says. For him, success is never about numbers, but about people, the right team, the right energy, and a genuine guest experience. “We move at our own pace — one Andrea at a time. The food should speak for itself, the hospitality should feel real, and the vibe should make people want to come back.”

At the heart of Pauro’s philosophy lies kindness and decency. “We’re not a corporate setup; we’re a family. When the team is happy, that energy reflects in the guest experience,” he says. Every restaurant under his leadership embodies a culture of respect and joy, ensuring guests leave feeling “a little lighter, a little happier.”

From BACI and Amici, the early successes that introduced Delhi to authentic, casual Italian dining, to Andrea’s Brasserie, which brings together European, Middle Eastern, and Asian inspirations, Andrea’s journey reflects passion, precision, and purpose. Every dish is inspired from his travels, recreated thoughtfully, researched deeply, and perfected through collaboration.

Today, with Eatinc Food and Beverage Pvt. Ltd., Andrea continues to blend global culinary excellence with heartfelt Indian hospitality. His dream is to thoughtfully expand Andrea’s Brasserie across India, opening two to three outlets in each major city, yet at a pace that allows his team to grow with integrity. “A good meal is only as good as the experience around it,” he says, a belief that defines everything from his kitchens to his tables.
