California’s fine dining landscape has reached new heights as the 2025 MICHELIN Guide unveiled its latest selection, honouring 548 restaurants across the state. Headlining this year’s edition are Providence in Hollywood and Somni in West Hollywood, both earning the coveted Three MICHELIN Stars, symbolising “exceptional cuisine worth a special journey.”

Providence, helmed by Chef Michael Cimarusti, was promoted from Two Stars. The restaurant continues to champion sustainable seafood with standout dishes like lobster mousse and box crab tart or roasted monkfish with black truffles. Somni, led by Chef Aitor Zabala, re-emerges with a reinvented vision offering imaginative bites such as mussel escabeche and shiso tartare tempura, reflecting Spanish influences and an immersive dining experience.

This year’s selection also welcomed two new Two Star establishments. Enclos in Sonoma impresses with New England-inspired tasting menus featuring lobster tartare and clam chawanmushi, while Kiln in San Francisco brings Nordic-inspired cooking techniques like curing and fermentation to the forefront.

In the One Star category, five new restaurants join the ranks: Lilo in Carlsbad, Mori Nozomi and Restaurant Ki in Los Angeles, Silvers Omakase in Santa Barbara, and Sun Moon Studio in Oakland. Each offers a unique experience—from seasonal Californian tasting menus to intimate sushi counters and contemporary Korean fine dining.

The Guide also recognised sustainability leaders, awarding MICHELIN Green Stars to Enclos and Sons & Daughters. These establishments demonstrate exceptional commitment to eco-friendly practices, including carbon-negative operations, repurposed materials, and in-house dairy programmes.

“Tonight marked a momentous evening for California and its culinary community,” said Gwendal Poullennec, International Director of the MICHELIN Guide. “Our anonymous Inspectors discovered extraordinary culinary gems to highlight in this year’s selection, including two new Three Star restaurants, Providence and Somni. Congratulations to all of the chefs and restaurant teams awarded tonight. We are proud to welcome you all into the MICHELIN Guide family.”

Alongside the stars, 123 restaurants were granted Bib Gourmand status for offering great food at moderate prices. Additionally, Special Awards were presented, including the Young Chef Award to Ki Kim of Restaurant Ki and the Exceptional Cocktails Award to the team at Eylan.

With cuisine spanning 55 categories, California's 2025 MICHELIN Guide affirms the state’s dynamic, diverse, and sustainable culinary future—one plate at a time.
