Blue Tokai, India’s premier speciality coffee brand, recently launched ‘Origins’, a new experience designed for those who wish to pause and appreciate the story behind their food and drink. Located on the first floor of Ireo Grand View High Street in Gurugram, the first Blue Tokai Origins café invites guests to immerse themselves in a world of craftsmanship, flavours, and community.

‘Origins’ is more than just a café; it’s a thoughtfully curated space where every detail — from manual brewing stations to a live bakery — aims to deepen the connection to the craft of coffee and food. Spanning 2,000 sq ft, the venue offers a multisensory journey that highlights the processes and people behind every offering, reflecting Blue Tokai’s commitment to transparency and authenticity.

A standout feature is the dedicated Play Bar, showcasing an extensive selection of manual brewing techniques, including Chemex, Syphon, and Slow Drip, each explained by expert baristas. The experience is further enriched by a Nitro Cold Brew tap, serving chilled, nitrogen-infused single-origin coffee crafted with innovative technology.

At the heart of Origins is The Coffee Cellar, where Blue Tokai’s rarest coffees, frozen at their peak, are preserved and brewed as Pour Overs to highlight their unique flavour profiles. This intimate, temperature-controlled space underscores the brand’s dedication to quality and provenance.

Adding a warm, sensory touch, Suchali’s Artisan Bakehouse operates a live, glass-walled bakery, where visitors can witness the process of hand-shaped sourdough loaves, croissants, and other baked delights. These artisanal breads, made with natural cultures, are also available to take home fresh.

The menu, crafted in collaboration with Chef Auroni Mukherjee, celebrates comfort with a refined edge, featuring handmade pastas such as Chilli Crunch Carbonara, gourmet sandwiches on Suchali’s signature sourdough, and dishes using farm-sourced produce. Sweet treats from Suchali’s include Tiramisu and Coconut Berry Lamington, all prepared with a focus on depth, balance, and attention to detail.

“Origins is where everything we’ve been building over the last decade comes together — the coffee, the craft, the community, the partners. It’s not just a larger café; it’s a space to slow down, try something new, and reconnect with what you love about coffee, alongside the warmth of a live bakery and an artisanally crafted menu with locally sourced ingredients. Every detail, from the brewing bar to the live bakery, has been designed to deepen the experience of connection and flavour,” said Shivam Shahi, Co-founder, Blue Tokai Coffee Roasters.  

Throughout Origins, visual storytelling brings to life the stories of the farmers, artisans, and processes behind Blue Tokai’s offerings. The space will evolve over time, hosting workshops, producer engagements, and sensory experiences, inviting guests to explore coffee in new and meaningful ways.
