Within the elegant surroundings of the Sheraton Grand Bengaluru Whitefield Hotel & Convention Centre houses Zarf, its signature fine-dining restaurant, now celebrating its first anniversary. In just one year, Zarf has become synonymous with culinary storytelling, a destination where Indian food goes beyond flavour to narrate heritage, craft, and culture.
A Year of Redefining the Indian Plate
From the Himalayan northwest to the coasts of Kerala, from Mughal kitchens to Persian influences, Zarf reimagines India’s culinary treasures. Indigenous ingredients such as Lahori Namak and Chilgoza pine nuts, and delicate Taftan bread speak of centuries of trade and travel.
The new anniversary menu continues this journey:
• Himalayan Pink Salmon Tikka – charred yet tender, evoking mountain streams.
• Kashmiri Duck Shabdegh – slow-cooked in saffron, turnips, and warming spices.
• Bharwan Gucci Korma – prized morels simmered in rich gravies.
Even a humble lotus stem is transformed, stuffed with cheese and nuts, a reminder that luxury can lie in simplicity when prepared with care. Haoma Comes to Bengaluru
Marking this milestone is a bold collaboration: a two-day pop-up with Haoma, Bangkok’s Michelin-starred and Green Star restaurant, on September 18–19.
Led by Chef Deepanker Khosla (Chef DK), Haoma is Asia’s most sustainable dining space and Bangkok’s first urban farm restaurant. Its ethos is radical yet rooted: “We grow what we cook, we cook what we love.”
For Bengaluru, Haoma brings Neo-Indian cuisine, a fine-dining experience that bridges sustainability with Indian flavours expressed through global techniques. Vegetarian diners will have a specially curated menu, affirming Haoma’s inclusive philosophy.
Chef DK’s approach mirrors Zarf’s own ethos. Both highlight heritage and sustainability, with one rediscovering India’s past and the other reshaping its future.
