Actor Sanjay Dutt has made his foray into hospitality with the launch of Solaire, his first-ever restaurant, at Grand Hyatt, Kalina, Mumbai. Conceived as an immersive dining destination with a dynamic after-dark spirit, Solaire evolves from leisurely daytime dining to elegant dinners and transforms into a high-energy bar with cocktails and music. Placing food firmly at the centre, the concept introduces global gastronomy to Mumbai in a way that is bold, refined and personal, complemented by a vibrant atmosphere.
The menu, created in collaboration with a Michelin-experienced chef, is a mosaic of cultures and flavours, offering both familiarity and surprise. Diners can experience Deconstructed Classics inspired by Dutt’s travels, slow-simmered Indian curries layered with heritage masalas, vibrant Mediterranean mezze, wok-tossed Pan-Asian delicacies and refined European creations, from artisanal burrata to French patisserie. Each dish carries nostalgic undertones reimagined with innovation.
Solaire’s bar mirrors this philosophy, with cocktails that tell stories of culture and craft. Signature creations include the Solaire Star, a colour-shifting botanical cocktail with lemongrass vodka and blue pea tea; the Aachari Berry, a tangy gin-based ode to India’s pickling traditions; the fiery Tamarind Picante, with tequila, lemongrass and chilli; the bold Black Panther Party, a rum and berry blend with activated charcoal; and Amazonia, inspired by Brazil’s rainforest with cachaça, açaí and passionfruit. A curated Zero Proof menu complements the programme.
Designed by a boutique studio, the space draws inspiration from solar elements – warmth, fire, earth and flow. Highlights include a volcanic stone and brass open kitchen, a custom mosaic cocktail bar, rich velvet upholstery, curated art and handcrafted furniture. An adaptive lighting grid shifts from bright warmth in the day to moody tones at night, while sensory touches such as a signature citrus blossom and smoked oud scent ensure each visit feels distinct.

The concept will be steered by Abhishek Chabria, who will play a pivotal role in shaping the guest journey, ensuring Solaire stands out as a landmark in Mumbai’s dining scene. Nelson Nair has also joined as F&B Consultant, bringing expertise to refine and elevate the hospitality experience.
With its blend of global flavours, inventive cocktails and immersive design, Solaire is set to become one of Mumbai’s most compelling new dining destinations.
