Patliputra Food Festival at Novotel Aerocity

Food Exchange at Novotel New Delhi Aerocity, in association with Gormei, announced An Ode to Patliputra Food Festival, a ten-day culinary showcase presenting flavours from Bihar. The festival will take place from November 21 to 30, 2025, and will present dishes rooted in the state’s culinary traditions, known for mustard oil, spices, and home-style methods.

The menu is curated by Rachna Prasad, known as Ek Ladki Bihari. Prasad, originally from Patna with roots in Gaya, has focused her work on promoting traditional food from Bihar. She began her career with the Taj group before founding Ambrosia in Mumbai. She has been recognised with awards including the Best Asian Cuisine Award from Living Foodz and the Notable HomeChef of India, as well as honours from Godrej, UpperCrust and The Times Food Guide.

The festival menu will present well-known dishes from the region, prepared using traditional recipes and long-established techniques. The selection reflects influences from Bihar’s agricultural landscape, community food practices, and cooking styles passed down over generations.

The highlighted dishes include Dhuska, Litti Chokha, Mutton Goli, Champaran Mutton, Khatta Meetha Kohra, Sehjan Aloo and Dehati Murgi, along with desserts such as Malpua Rabdi, Khaja and Thekua.

Manish Dayya, General Manager, Pullman & Novotel New Delhi Aerocity, said, “Bringing India’s regional stories to the forefront has always been central to our culinary vision. The Patliputra festival is a tribute to Bihar’s depth of flavours, age-old techniques and vibrant food traditions. Having Rachna Prasad lead this celebration at Food Exchange adds an authentic, rooted touch that her craft reflects the soul of the region and the nostalgia it evokes. We’re delighted to present an experience that reconnects guests with a cuisine shaped by history, simplicity and heart.”

Guests can experience the menu during dinners and Sunday brunches, where Rachna Prasad and the Food Exchange culinary team will present the Patliputra festival, highlighting Bihar’s culinary legacy.
