This September, The Westin Sohna Resort & Spa is inviting diners to journey into the Himalayan foothills without leaving Delhi NCR. For three days only, from September 5 to 7 , 2025, the resort’s Red Brick Room will host Flavours of the Hills, an exclusive Garhwali Thali pop-up celebrating the rustic cuisine of Uttarakhand.
Curated by Chef Birendra, the thali highlights the earthy spices, age-old recipes and wholesome character of Garhwali cooking. Guests can choose between a vegetarian or non-vegetarian spread, each designed to showcase the region’s culinary heritage with a refined touch.
Speaking about the promotion, Chef Pradeep Rawat, Executive Chef at The Westin Sohna Resort & Spa, said: “At The Westin Sohna Resort & Spa, we believe food is most memorable when it is rooted in the land. The Garhwali Thali, curated by Chef Birendra, reflects this philosophy — bringing together the honest, soulful cuisine of Uttarakhand with our farm-to-table sensibility. Many of the ingredients are sourced from local growers and our own organic gardens, ensuring that every dish is not just authentic but also fresh, wholesome, and deeply connected to nature.”
The vegetarian thali begins with starters such as Pahadi Paneer Tikka and Chapti Tawa Arbi before moving into hearty mains like Bhatt ki Churkani, Aloo ki Thichwani, Gahat ki Dal and Pahadi Matar Paneer. Served with traditional breads such as Kode ki Roti and Marse ki Roti, the dishes are complemented by signature chutneys including Til ki Chutney and Bhatt ki Chutney. A sweet serving of Jhungre ki Kheer, made with millet, completes the experience.
For those who prefer meat, the non-vegetarian thali adds dishes such as Pahadi Murg Tikka, Macchi ke Pakore, Bhunna Maas and Chicken Tari Wala, while retaining the same rustic breads, sides and desserts.
Available for both lunch and dinner during the three-day event, the thali is priced at Rs 2,300 plus taxes for vegetarian and Rs 2,500 plus taxes for non-vegetarian. With its authentic flavours and soulful recipes, this limited-time celebration is as much a cultural experience as it is a meal.
