Sailing to Serendib
A Taste Of Sri Lanka In Mumbai
HyLo, Mumbai, in collaboration with the Consulate General of Sri Lanka in Mumbai, Sri Lanka Tourism, and Cinnamon Hotels & Resorts, Sri Lanka, introduced ‘Sailing to Serendib’, a Sri Lankan food pop-up and fundraising initiative aimed at supporting relief and rebuilding efforts following the devastation caused by Cyclone Ditwah.
Scheduled across February 7-8, 2026, the two-day culinary showcase will feature a curated Sri Lankan dinner and brunch, with a portion of the proceeds directed towards the Rebuilding Sri Lanka Fund of the Government of Sri Lanka.
Commenting on the collaboration, Mayank Bhatt, Founder & CEO, All In Hospitality, said, “At All In Hospitality, we believe that food has the power to build communities and create meaningful impact beyond the plate. HyLo has always been about celebrating regional food cultures with integrity and purpose. Partnering with the Consulate General of Sri Lanka for ‘Sailing to Serendib’ allows us to use our platform to support a nation rebuilding after immense loss, while also introducing our guests to the richness and resilience of Sri Lankan culinary heritage. This initiative reflects our commitment to thoughtful hospitality, where culture, responsibility, and generosity intersect.”
Priyanga Wickramasinghe, Consul General of Sri Lanka in Mumbai, added, “Sri Lankan cuisine is a cartography of its cultural dynamics, international relations, migratory patterns, imagination and ingenuity, all anchored within a singular cosmopolitan foodscape. It reflects our history as a nation as well as our collective identity. We have absorbed from numerous cultural and geographic regions across the world, and have reinvented these influences, effectively making them our own. ‘Sailing to Serendib’ is not only a forum to showcase Sri Lankan cuisine, but also an invitation to visit our beautiful country. It is, as importantly, an effort to raise funds towards rebuilding in the aftermath of the havoc caused by Cyclone Ditwah.”
The immersive dining experience will bring together chefs from Cinnamon Grand Colombo, alongside Chef Mrignak Singh, Culinary Director, All In Hospitality. The menus for ‘Sailing to Serendib’ have been designed to showcase the breadth of Sri Lankan gastronomy, from coastal seafood traditions and slow-cooked meat preparations to heirloom vegetable dishes and celebratory desserts.
Guests can expect live hopper stations serving plain and egg hoppers paired with traditional kattā sambal, robust mains such as Chicken and Cheese Kottu, Jaffna Mutton Curry, Negombo-style Tempered Prawns, Cashew White Curry, and fragrant rice preparations infused with lemongrass and caramelised onions. The spread also highlights regional specialties, including Brinjal Moju, Devilled Potatoes, Pepper Stews, and coconut-rich gravies, alongside an extensive selection of Sri Lankan condiments and sambals.
Desserts will feature classics like Wattalappan, Milk Toffee, Kokis, Sesame Balls, and tropical fruit-based puddings.
